How To Make Moroccan Turmeric Soup

For the preparation, you will need the following ingredients:

  • 2 teaspoons of turmeric
  • 2 tablespoons of butter
  • 1/2 teaspoon cumin seeds
  • 1 tablespoon of honey
  • 1 tablespoon of freshly squeezed lemon juice
  • 1/3 teaspoon of sweet pepper
  • 1 cup of chopped onion
  • 3 cups carrot, cut into cubes
  • 3 cups of chicken or vegetable stock
  • 2 chopped garlic cloves (or more if desired)
  • A pinch of black pepper and salt
  • 1/2 cup of yogurt

Preparation:

Melt the butter in a large cooking pot and add the onion and garlic. Cook them over medium heat for about 2 minutes. Next, add the carrots and braise them for a few minutes. Pour the chicken or vegetable broth and bring the mixture to boil. Reduce the heat, cover the pot and let it simmer for about 20 minutes, until the carrots are completely tender. In the end, add turmeric.

While the soup is cooking, take a pan, add the cumin seeds and stir-fry them for about 5 minutes, without oil. Then, transfer the seeds in a grinder and grind.

Remove the soup from the heat. Leave it aside to cool down a bit. Then, transfer it in a food processor and pulse, until you get a consistent and creamy mixture.

Return the soup in the cooking pot and stir in the honey, lemon juice and sweet pepper. If you like eating salt and black pepper, season the soup. If not, skip this step.

Serve the turmeric soup in a deep bowl. Combine the ground cumin with the yogurt and add it to the soup. And that’s it! Pretty easy, right?
