Here’s Why You Should Not Refrigerate Tomatoes
Most people, when they buy tomatoes, they store them in the refrigerator. Doing this, they believe that these delicious fruits will remain fresh and tasty for a longer period. But, according to the scientists from the French Association for Agriculture, the opposite is true. Their numerous tests confirm that these red fruits become soft and lose their taste much faster when refrigerated.

From a scientific point of view, the tomato is in fact a fruit, coming from a region of warm climate. Storing this fruit in the refrigerator leads to chemical changes in its composition, causing disintegration of the tomato’s cells. These changes start happening at 10 degrees Celsius and lower, while the majority of refrigerators are set to temperatures from 2 to 6 degrees Celsius. Thus, when you put the tomatoes in the fridge, their taste starts to spoil, the bark becomes wrinkled and the flesh gets soft texture. Especially if you keep them refrigerated for more than 2 days.
Still, There Are Exceptions
The chemical reaction we describe above is mainly for unripe tomatoes. But, when it comes to soft and ripe tomatoes, the opposite applies. Namely, scientists point out that if we buy an already ripe tomato, we need to put it in the fridge for a few hours before serving. This way, the cold will cause a “hardening” chemical effect. But, don’t keep the fruit refrigerated longer, as it’ll spoil.
How To Store These Fruits Properly
Put the unripe tomatoes in a paper bag and store them at a room temperature, so that they can become ripe and red. When it comes to the ripe form of these red fruits, keep them in a cool place, like your garage, or if you have a wine cellar or basement, even better. Don’t expose them to direct sunlight.
