How To Make Healthy Marshmallow Treats
For this recipe, you will need:
- 1 ½ tablespoons of gelatin, or agar-agar
- ½ cup of cold water
- ½ cup of organic honey
- 1/8 teaspoon of Himalayan salt
- 1 vanilla bean
Line a baking pan with parchment paper. Then, put half the amount of the water in a bowl and add the gelatin. Leave it aside, so that the gelatin softens.
In the meantime, put the honey in a cooking pot, along with the salt and the other half of the water. Heat the mixture on low fire, stirring it all the time. Roughly, bring it to a boiling point of 240° Fahrenheit. The mixture will reach this temperature in about 7-8 minutes. Or, you can use a thermometer to check it.
Then, to check the consistency of the hot syrup, take a little bit with a teaspoon and drip a few drops into a bowl filled with cold water. If the drops form small, soft balls, it means that the mixture is ready. Take it off the heat.
Now, carefully pour the hot syrup into the gelatin, while mixing with a hand mixer. Then, scape the vanilla bean and add it into the blend. Mix for about 12 to 15 minutes, or until the marshmallow mixture is thick and fluffy. Pour it into the lined baking pan and leave it for 12 hours, to dry. And finally, cut the marshmallows into squares. Serve with a cup of coffee, hot chocolate, with a dark chocolate topping, or coconut flakes.
