How To Make 2-Ingredient Japanese Chocolate Cake

For the preparation, you’ll need the following ingredients:

  • 3 bars of dark chocolate, or about 165 grams = 5.8oz; organic chocolate, with the highest percentage of cocoa is a great option;
  • 3 eggs
Preparation:

Break the eggs and separate the whites from the yolks. Take the egg whites and put them in the fridge, to cool down and get a more stable texture. Make a double boiler and liquefy the dark chocolate on steam. Leave it aside to cool down to room temperature. As soon as cold, add the yolks. Mix the ingredients, until they combine nicely.

In the meantime, turn on the oven and preheat it to 170⁰ Celsius, or 338⁰ Fahrenheit. While you wait the oven, take the egg whites from the fridge and whip them with an electric mixer, until you get a foamy and fluffy texture. If whipped nicely, the foam of the egg whites should be dense and should not slide in the bowl, when turned to the sides.

Scoop in about 1/3 of the egg whites and add it into the mixture of chocolate and yolks. Start mixing with a whisk, but slowly, not to ruin the texture and fluffiness. Then, add the rest of the whipped whites into the bowl and start mixing again, with a silicone spatula.

Line the baking pan with parchment paper, bottom and sides included, to prevent the chocolate dough from sticking. Then, pour in the mixture and hit the pan evenly and lightly on a flat surface, to prevent air bubbles in the cake. Put it in the preheated oven and bake for 30 to 40 minutes. You can use a toothpick to check when the cake is baked.

Serving:

Once baked, remove it from the oven, take off the parchment paper and cut it in pieces. You can top each piece of cake with your favorite fruit liquor. We suggest orange liqueur. Or you can dust if powdered sugar. Leave it to cool down for a bit, serve and enjoy!
