We all like muffins, freshly baked, right out of the oven. So today, we show you a recipe for these incredibly delicious, sweet potato muffins, full of antioxidants and anti-inflammatory properties.

As their name indicates, the main ingredient of these muffins is the sweet potato, which is very beneficial for the general health. This vegetable is rich in beta-carotene, an ingredient that destroys the damaging free radicals in the human organism, and affects the DNA of the cells. If we don’t stop the damaging effect of free radicals, it may lead to cell mutations and various types of cancer.

In addition, the sweet potato has plenty of other nutrients. Thus, it can help stop acute and chronic inflammations, which can further cause serious health problems.

Sweet Potato Muffins Recipe

For the preparation of this recipe, you’ll need the following ingredients:

– 1 medium-sized sweet potato
– 1 tbsp. of baking powder
– 3 organic farmyard eggs, slightly beaten
– 1/2 cup of organic maple syrup
– 2 tbsp. of extra virgin olive oil
– 3/4 cup of coconut milk
– 1/4 cup of organic coconut flour
– 1 cup of superfine brown rice flour
– 1 tbsp. of cinnamon powder
– ½ tsp. of Himalayan salt
– 1 tsp. ground ginger
– A pinch of ground nutmeg
– A pinch of ground cloves

Preparation Method

Preheat the oven to reach 200 degrees Celsius, and then roast the sweet potato for about an hour. Once done, remove it from the oven and allow it to cool down. Remove the skin. (You can keep the skin for later, and eat it as an appetizer, as it’s full of vitamins.)

Mash the sweet potato and put the puree in a deep bowl. Add the baking powder, beaten eggs, coconut milk, maple syrup, and extra virgin olive oil, and mix until everything combines. Pour the dry ingredients (brown rice flour, coconut flour, cinnamon powder, Himalayan salt, ground cloves, ginger, and nutmeg) in a different bowl, and mix. Add them to the mixture and stir to combine.

In the end, the dough should be thin and liquid, so that you can easily pour it into the muffin tray. Similar to batter.

Grease the muffin tray with olive oil and pour the mixture into the molds, until 2/3 are filled. Bake on the medium rack in the preheated oven for 30 to 35 minutes. And that’s it!
